This is a hard question to answer. It depends on what you want to do with the knife. I compare it to buying a new vehicle. You can not get a vehicle that will haul your family of 9, tow your camper, do 6 second quarter-miles and get 35 MPG. You have to make compromises. A steel that is easy to sharpen is not usually going to hold an edge. A steel that holds an edge for a long time may be more prone to chipping.
